  • Salt & pepper to taste

  • 1 tsp garlic powder
  • ½ tsp paprika
  • 1 cup cold beer (lager or pale ale works best)
  • Pinch of salt

For the Chips:

  • 4 large potatoes, peeled and cut into thick chips
  • 2 tbsp olive oil
  • Sea salt
  • Optional: fresh parsley for garnish

1. Prep the Chips

  • Preheat oven to 200°C (or air fryer at 190°C).
  • Toss the potato chips in olive oil and salt. Spread out on a tray.
  • Bake/air fry for 30–40 mins, flipping halfway until golden and crispy.

2. Make the Batter

  • In a large bowl, mix flour, baking powder, garlic powder, paprika, and salt.
  • Gradually whisk in cold beer until the batter is smooth and slightly thick. Set aside for 10 minutes.

3. Prep the Fish

  • Pat the barramundi fillets dry. Season with salt and pepper.
  • Remove fish skin [optional]
  • Dredge each fillet in plain flour, then dip into the beer batter.

4. Fry the Fish

  • Heat oil in a deep pan to 180°C.
  • Fry the fillets in batches for 4–5 minutes or until golden brown and crispy.
  • To check if the fish is perfectly cooked when frying, remove it from the oil and insert a meat thermometer into the thickest part of the fillet. You're aiming for an internal temperature of 55–60°C — this ensures the fish is tender, juicy, and cooked through without drying out.
  • Drain on paper towels.

5. Serve

  • Plate the crispy barramundi with chips and a wedge of lemon.
  • Add tartar sauce or aioli on the side for extra indulgence.
