How to cook kangaroo loin

  • Thaw in the chiller overnight
  • Remove from chiller 30min prior to cooking and pat dry.
  • Season with salt and pepper and drizzle with oil.
  • Heat frying pan or barbecue to medium-high.
  • Cook for 4–5 minutes on each side for a medium-rare finish, or to your liking.
  • Rest for 10 minutes under foil before serving.
