1–2 tbsp mayonnaise or crème fraîche

Zest of ½ lemon + 1 tsp lemon juice

1 tsp Dijon mustard (optional)

1 tbsp chopped fresh dill or parsley

1 cucumber, sliced into thick rounds OR baguette, thinly sliced & toasted

1. Cook Spanner Crab
- In a small pan, drizzle with olive oil and stir fry the crab meat for 1-2 minutes. Season with salt and pepper.
- Let it cool, cover and place in the chiller for 1 hour. You can also prepare the crab the night before.
2. Mix the Crab Filling
In a small bowl, gently combine:
