A simple yet impressive dish featuring buttery Japanese Hamachi, also known as Yellowtail King fish, seared until golden, then drizzled with a tangy soy-citrus glaze. Light, fresh, and packed with umami; perfect for a healthy dinner or entertaining.
✅ Ingredients (Serves 2)
- 
2 Butcher Box yellowtail fillets (approx. 150–180g each)
 - 
1 tbsp olive oil
 - 
1 tsp sesame oil (optional for extra aroma)
 
For the Glaze:
- 
2 tbsp light soy sauce
 - 
1 tbsp mirin
 - 
1 tbsp fresh lemon or yuzu juice (or lime)
 - 
1 tsp honey or sugar
 - 
1 garlic clove, minced
 - 
1 tsp grated fresh ginger
 
Garnish (optional):
- 
Spring onions, sliced
 - 
Toasted sesame seeds
 - 
Steamed rice and your favourite vegetables, to serve

 
👩🍳 Instructions
1. Pat & Season the Fish
- 
Pat the yellowtail fillets dry with a paper towel.
 - 
Season both sides lightly with salt and pepper.

 
2. Sear the Fillets
- 
Heat neutral oil in a non-stick or cast iron skillet over medium-high heat.
 - 
Place fillets skin-side down and sear for 1 minute, until golden.

 - 
Flip to the side and cook for 2–3 minutes on each side, until cooked through.
 - 
Remove and set aside.

 
3. Make the Glaze
- 
In the same pan, lower heat to medium.
 - 
Add a small drizzle of sesame oil (optional), followed by garlic and ginger: sauté 30 seconds.

 - 
Add soy sauce, mirin, lemon juice, and honey.
 - 
Simmer for 1–2 minutes, until slightly reduced and glossy.

 
4. Plate & Serve
- 
Return the fish to the pan to evenly coat with the Glaze for 30 seconds.

 - 
Remove the fish from the pan, plate and drizzle the glaze over the fish fillets and serve. Garnish with spring onions and sesame seeds.

 - 
Serve with steamed jasmine rice and sautéed Asian greens.

Want more punch? Add a dash of chili oil or a few slices of red chili.

Use yuzu kosho instead of lemon for a citrusy-spicy kick.
