A refreshing, no-cook recipe featuring sashimi-grade salmon marinated in citrus, tossed with avocado, chili, and fresh herbs. Light, vibrant, and full of flavour — perfect as a starter, snack, or summer meal.
✅ Ingredients (Serves 2–3)
- 
300g fresh Akaroa NZ King Salmon, diced [2 x Salmon portions 140-160g]
 - 
Juice of 3 limes and 1 lemon
 - 
½ red onion diced
 - 
1 small avocado, diced
 - 
1 small red chili (or bird’s eye chili), finely chopped [optional]
 - 
1 tbsp chopped fresh coriander (cilantro)
 - 
Salt and black pepper, to taste
 - 
Optional: ½ tsp olive oil or sesame oil
 - 
Tortilla chips or lettuce cups, to serve

 
👩🍳 Instructions
1. Prep the Salmon
- 
Cut the salmon into small, bite-sized cubes.

 - 
Place in a glass or ceramic bowl (avoid metal, as it can react with the citrus).
 
2. Marinate in Citrus
- 
Pour over the lime juice until the salmon is just covered. Ensure all salmon are fully submerge in the bowl,
 - 
Stir gently and cover. Let marinate in the fridge for 20–25 minutes, depending on your preferred doneness. (Less time = more sashimi-like texture; longer = more cured.)

 
3. Drain & Toss
- 
After marinating, drain off most of the citrus juice, leaving just a spoonful for flavour.
 - 
Add red onion, avocado, chili, coriander, and a pinch of salt and pepper.
 - 
Toss gently to combine. Add oil (if using) for a touch of richness.

 
4. Serve Immediately
- 
Spoon into small bowls or onto chilled plates.
 - 
Serve with tortilla chips, crackers, or in crisp lettuce cups for a low-carb option.
