This rich and creamy chowder is a comforting one-pot meal, perfect for colder days. With tender chunks of white fish, juicy prawns, potatoes, and corn in a savoury cream-based broth, it’s a guaranteed crowd-pleaser.
Ingredients:

300g white fish fillets (e.g. snapper, blue cod), cut into chunks

200g raw medium prawns, peeled and deveined

1 onion, chopped

2 cloves garlic, minced

2 medium potatoes, peeled and diced [1.5cm per size]

1 cup corn kernels (fresh or frozen)

2 tbsp flour

3 tbsp butter or olive oil

3 cups either fish stock, chicken stock, or prawn stock

1 cup milk or cream
-
Salt, pepper, and fresh parsley
Instructions:

Heat butter in a large pot. Sauté onion and garlic until soft.

Add flour and stir for 1–2 minutes to form a roux.

Gradually whisk in the stock and bring to a simmer.

Add potatoes and cook until tender (10–12 minutes).

Add corn, fish, and prawns. Simmer gently for 5 minutes.

Stir in milk or cream. Season with salt and pepper.

Want a thicker chowder? Lightly mash a few potatoes before adding the seafood.
