Creamy Fish and Prawn Chowder

This rich and creamy chowder is a comforting one-pot meal, perfect for colder days. With tender chunks of white fish, juicy prawns, potatoes, and corn in a savoury cream-based broth, it’s a guaranteed crowd-pleaser.

Ingredients:

  • 300g white fish fillets (e.g. snapper, blue cod), cut into chunks

  • 200g raw medium prawns, peeled and deveined

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 2 medium potatoes, peeled and diced [1.5cm per size]

  • 1 cup corn kernels (fresh or frozen)

  • 2 tbsp flour

  • 3 tbsp butter or olive oil

  • 3 cups either fish stock, chicken stock, or prawn stock 

  • 1 cup milk or cream

  • Salt, pepper, and fresh parsley

Instructions:

  1. Heat butter in a large pot. Sauté onion and garlic until soft.

  2. Add flour and stir for 1–2 minutes to form a roux.

  3. Gradually whisk in the stock and bring to a simmer.

  4. Add potatoes and cook until tender (10–12 minutes).

  5. Add corn, fish, and prawns. Simmer gently for 5 minutes.

  6. Stir in milk or cream. Season with salt and pepper.


🧑🍳 Tips:

  • Want a thicker chowder? Lightly mash a few potatoes before adding the seafood.

  • Add a splash of white wine or squeeze of lemon juice to brighten the flavour. [optional]

  • For heat lovers, a dash of Tabasco or chilli oil goes beautifully.
