Ingredients:

300g white fish fillets (snapper, blue cod, barramundi, red cod), cut into chunks

2 tbsp red or yellow curry paste

1 cup coconut milk

1 cup chicken or fish stock

100g red capsicum, sliced

200g zucchini, sliced
-
2 tbsp fish sauce
-
1 tsp sugar

Juice of 1 lime

Fresh coriander and jasmine rice, for serving
Instructions:

Heat a little oil in a pan. Sauté curry paste for 1–2 minutes until fragrant.

Add coconut milk and stock. Bring to a gentle simmer.

Add vegetables and simmer for 5 minutes.

Add fish chunks and cook for 5–6 minutes, or until cooked through.
