Thai Fish Curry with Coconut Milk

Ingredients:

  • 300g white fish fillets (snapper, blue cod, barramundi, red cod), cut into chunks

  • 2 tbsp red or yellow curry paste

  • 1 cup coconut milk

  • 1 cup chicken or fish stock

  • 100g red capsicum, sliced

  • 200g zucchini, sliced

  • 2 tbsp fish sauce

  • 1 tsp sugar

  • Juice of 1 lime

  • Fresh coriander and jasmine rice, for serving



Instructions:

  1. Heat a little oil in a pan. Sauté curry paste for 1–2 minutes until fragrant.

  2. Add coconut milk and stock. Bring to a gentle simmer.

  3. Add vegetables and simmer for 5 minutes.

  4. Add fish chunks and cook for 5–6 minutes, or until cooked through.

  5. Stir in fish sauce, sugar, and lime juice.

  6. Serve with rice and fresh coriander.


🌶️ Tips & Variations:

  • Prefer milder heat? Use just 1 tbsp curry paste or try yellow curry.

  • Add prawns or squid for a mixed seafood version.

  • Swap red curry for green curry paste for a different flavour profile.
